Sydney is set to transform into an indulgent chocolate-inspired wonderland as smooth Festival of Chocolate arrives in town for the weekend.
Smooth FM’s annual chocolate extravaganza is the largest two-day celebration of sweet indulgences in Australia, featuring pop-up stalls from leading dessert connoisseurs including Black Star Pastry, Gelato Messina, N2 Gelato and Chocolate 5018 to name a few.
InterContinental Sydney’s Cafe Opera will debut a menu of favourites inspired by the iconic buffet’s plethora of sweet and savoury dishes. This year, the culinary team presents two signature experiences: for the sweet-tooth, the must-have Vanilla Bean and Salted Caramel Chouquettes, a traditional French pastry with a salty-smooth twist by Head of Pastry, Simon Veauvy.
Simon explains the inspiration behind the dessert, “Chouquettes were a favourite for me growing up, and a popular treat for locals throughout my home country (France). I have re-worked a traditional recipe to inject the pastry with explosions of salted caramel and vanilla bean cream, then dressed them with layers of caramel and dark chocolate crunch for intense decadence.”
Then for the savoury palate, a BBQ Pulled Beef Brisket with Coleslaw and Chipotle Aioli by Sous Chef, Luke Fernley, and the popular Gourmet Hot Dog with Kransky. To treat the young and young-at-heart, Cafe Opera’s stall will also feature an all-time classic, Fairy Floss.
